Located in the vibrant heart of Surry Hills at 23/33 Mary St, Firedoor Restaurant stands as a testament to the primal power of open-fire cooking. In an era where modern kitchen technology often prioritizes speed and precision, this establishment takes a deliberate step back to the origins of culinary craft. By stripping away gas and electricity, the kitchen relies entirely on the unpredictable and transformative nature of wood fire. Every dish that leaves the kitchen is a result of careful temperature management, patience, and a deep respect for the raw ingredients sourced from local producers.
The atmosphere within the restaurant is defined by the warmth of the hearth, creating an environment that feels both sophisticated and deeply grounded. Guests are invited to witness the choreography of the chefs as they navigate the flames, turning simple, seasonal produce into complex, smoky masterpieces. It is not merely a place to eat, but a space to observe the elemental connection between fire, food, and the people who prepare it. The philosophy here is rooted in the belief that fire is not just a tool for heat, but an essential ingredient that imparts a unique character to every component of a meal.
Defining Characteristics of the Firedoor Experience
The Mastery of Wood-Fired Cooking: The entire kitchen is built around custom-made wood-burning ovens and grills. By utilizing different types of wood, such as apple, ironbark, or olive, the culinary team can manipulate the flavor profiles of the ingredients, adding subtle layers of smoke and char that cannot be replicated by conventional cooking methods.
A Commitment to Seasonal Integrity: The menu is a living document that changes based on what is available from local farmers and suppliers. By focusing on the peak of the season, the restaurant ensures that each ingredient is showcased at its most vibrant state, requiring minimal intervention to highlight its natural quality.
Transparent Culinary Craft: The open-plan layout of the dining room allows guests to see the entire process from preparation to plating. This transparency fosters a unique connection between the diner and the kitchen, demystifying the effort and skill required to manage a live fire throughout a busy service.
Minimalist Approach to Flavor: Rather than relying on heavy sauces or complex techniques, the kitchen focuses on the purity of the product. The goal is to let the fire enhance the inherent sweetness, earthiness, or texture of the produce, creating a dining experience that is both honest and memorable.
A Destination for Culinary Enthusiasts
Visiting Firedoor Restaurant offers a rare opportunity to experience the intersection of ancient tradition and contemporary dining. The focus on the elemental nature of cooking ensures that every visit is distinct, reflecting the nuances of the wood, the season, and the daily harvest. Whether you are a local resident of Surry Hills or a visitor exploring the culinary landscape of New South Wales, the restaurant provides a setting that encourages slow, thoughtful appreciation of food.
By prioritizing the integrity of the ingredient and the artistry of the flame, the team at 23/33 Mary St continues to refine a style of cooking that feels both timeless and innovative. It is a destination that rewards those who appreciate the subtle details of a well-prepared meal and the comforting, rustic allure of an open fire. As the culinary world continues to evolve, Firedoor remains a steadfast reminder of the beauty found in simplicity and the enduring power of the hearth.

A premium one-of-a-kind dining experience in Sydney that you should try it you can at least once. Famed for everything being cooked over a wood fire, everything was delicious, fragrant and a marvel to admire.
We visited on Valentine's day for their four course lunch menu and while it's certainly upmarket pricing, I feel it's well deserved in the amount of skill displayed and the service provided.
Each course was elegantly plated and balanced in flavour profile. Ingredients were cooked to perfection such that they maintained their innate flavour but were imparted with a smokiness from the fire, yet not overcooked or overdone. The steak was a true highlight - simple but incredibly delicious and precisely medium rare.
Staff were super polite and attentive, making sure we always got a change of cutlery after each course, table crumbs were wiped away and drinks were topped up.
Lastly, the open kitchen is a thing of beauty and was great to admire as we dined. A blend of rustic and modern with each spark of flame.

This restaurant is an experience and well worth however much you spend. The flavours were a delight to my taste buds. The service was excellent. The information provided with the serving of food and pairing of wine was educational. Glad my nephew recommended it to me. More

We ordered the 6-course set menu and every dish was incredible. The flavours were beautifully balanced and unlike anything you’d find elsewhere. Everything is made with seasonal, local ingredients, with a subtle smoky touch that really sets this place apart. It is on the pricier side, but absolutely worth it for the experience. More

The steak was excellent. The second best dish was the vegetarian with the zucchini. The fish was on the dry side though. I would rate the food and service as four stars but the amount of noise completely ruined the experience. Especially the wines were well presented, but it was extremely hard to hear what was being presented. More

We celebrated my husband’s birthday at Firedoor and the entire experience was exceptional from start to finish.
The food was truly outstanding - every course was thoughtfully crafted and beautifully balanced. The 221-day dry-aged beef was the standout for us: rich, perfectly cooked, and absolutely unforgettable.
We chose the six-course chef’s menu with wine pairing, and each pairing complemented the dishes beautifully. A special mention to the Margaret River cocktail, which was delicious and a perfect way to start the evening.
The atmosphere was calm, refined, and intimate, making it ideal for a special occasion. The wait staff were incredible - attentive, knowledgeable, and genuinely warm, adding so much to the overall experience without ever feeling intrusive.
Firedoor delivered an unforgettable dining experience and made my husband’s birthday feel truly special. We can’t wait to return.

We had the 6 course set menu at $225, everything was alright but nothing exceptional. I was expecting the food to be more smoked in terms of the flavour profile but it didn’t delivered.
The first dish was just some cold ceviche put together, the zucchini had a bitter after taste, pork was crunchy and delicious (my fav), the sauce from the fish dish was delicious (changes the profile of the fish), the ribeye was too fatty for me (taste good) but a total Joke wanting $65 more for a 200 days dry age (for 2 slice). The sparkling water came flat as well !
I wouldn’t come back here anytime soon honestly.

There’s a lot of hype about this restaurant, especially in light of the Netflix outing, but it’s absolutely living up to the hype. This is a ‘must go’ situation. The sommelier was brilliantly knowledgable and happy to chat with us beyond the scope of her ‘just serving up the wine’. Waiting staff so on the ball, super friendly. And the food was SO good! Each course meticulously crafted and brought the whole experience together.
We had the six course tasting menu and the wine pairing as well as some oysters and sparkling Chenin Blanc to kick us off.
Absolutely we would come back.
Oh- a sign on the door coming back into the restaurant after visiting the loos would be helpful as I nearly got lost.

We celebrated my husband’s early birthday at Firedoor and had a wonderful experience. I originally hoped to book a Saturday dinner, but it was fully booked by early October—so we went for lunch and had the Chef’s 3-course set menu.
Every dish was cooked by flame or smoke, and the flavors were incredible. The wood-fired bread was so tasty, especially paired with the smoked butter with honey & rye—I wish they served more than one slice per person!
The scallop was flame-cooked to perfection and beautifully matched with a pork broth. We upgraded our Wagyu to the 250-day dry-aged steak, which was flame-kissed and absolutely worth the extra $70pp.
A special touch: they surprised my husband with a smoked marshmallow topped with a candle for his birthday. It was playful, delicious, and perfectly in theme with their fire-and-smoke philosophy—such a thoughtful way to end the meal.
I do hope they offer the 6-course set menu at lunch one day—we’ll definitely be back to try more of their hot flamed creations!
The only letdown was the potato side dish, which didn’t quite match the high standard of everything else.
Overall, the dining experience was excellent. Great food, warm service, and a memorable way to celebrate.

Catch-up with my friend for Christmas🎄. Really enjoyed the atmosphere, warm, comfortable, and not too noisy. The open kitchen is great, and the smell of the beef cooking hits you straight away and instantly makes you hungry.
The food was amazing, honestly better than I expected. I’d read some mixed reviews and knew the restaurant was on Netflix, so I went in with an open mind, but it turned out to be a very pleasant surprise.
Service was lovely as well. The waiter was friendly and explained the dishes in a clear, relaxed way, not too much, just the right amount. Overall, a very enjoyable and happy dining experience 😊
